Join Walter at the large table in the kitchen of our cooking school as he takes the best seasonal produce available and, in the most entertaining and delicious way imaginable, explains how to transform it into a fantastic meal. Pitch in and help Walter cook or just fire away with questions. Then, when the dishes are ready, sit back and enjoy the fine food along with a glass of wine or beer.

The current themes of the Hands-on Demonstration Classes are as follows. (Note that the choice of dishes can be tailored to your own preferences. Please inform us of food intolerances or other requirements and we will adjust the menu to suit your needs.)


Covers everything you need to know about creating authentic Spanish tapas:

–      dates stuffed with sobrasada and Serrano ham

–      chorizo-filled mushrooms

–      baked goat’s cheese with garlic and tomato oil

–      pa amb oli (bread with olive oil)

–      pimientos de pardon

–      olive tomato and calamari tapenade

–      chicken and prawn skewers with aioli

–      mussels and clams braised in white wine

–      octopus salad with crisp bread

–      cinnamon churros with hot chocolate sauce

French starters

Showcases some of the most popular and easy to re-create French canapes and other starters:

–      cheese puffs

–      beef tartare with crispy caper bread

–      oyster fritters in tartare sauce (oyster shooters are optional)

–      chilled springtime soup with smoked salmon

–      duck rillettes with cornichon relish

–      goat’s cheese pralines with herbs and croutons

–      fish and tomato tartare with grissini

–      chocolate and orange truffles

Europe’s favourite sweet treats

You will definitely get a sugar rush when you learn how to make some of Europe’s sweet classics:

–      panna cotta with berry compote

–      tarte tatin with cinnamon and honey cream

–      chocolate and almond soufflé with warm chocolate ganache and crème Chantilly
